Chicken Marbella with Herbed Cous Cous
The chicken is marinated over night with olives, prunes capers, and vinegar, lots of white wine, garlic and herbs. Then roasted until the chicken is golden and skin almost crispy. The sweetness from the prunes balances the sharpness of the capers and olives in a delicious clear broth. The herbed cous cous soaks up the yumminess without interfering with the flavours and the two are a match made in heaven! Simply De-licious!
