Czech Roast Pork with Potato Dumplings and Sautéed Spinach

Traditionally Czech, this is one of Martin's favourites. After you eat this meal you are going to ask me how a dish with just caraway seeds, salt, pepper, garlic and onion can be so positively tasty. The pork shoulder is cut into big chunks and marinated over night, then roasted till it is golden brown and almost crunchy on the out side. The potato dumplings are the real treat though. The dumplings are cooked as a log and then sliced into disks with a thread and served to soak up the pork juices. The healthy part of this meal is the side of spinach. The combination of the three is simply magic... For maximum eating pleasure eat with chilled beer:)
