Green Curry Fish with Coconut Rice

Traditionally a Thai curry. The smell of this curry alone is magnificent. Imagine all the fragrances and flavours of lemongrass, coriander, some kaffir lime leaves and basil from the garden all simmering in rich coconut cream, with fish and crunchy vegetables. Its just yum! With a curry like this one I like to keep it simple - serve it on steamed slightly sticky coconut rice.
